Following the recipe from Jill Nussinow's Vegan under Pressure, we'll make a sesame tofu to live for. Tofu takes on a different texture when pressure cooked - more firm and less rubbery.
Ingredients needed: dry black eyed peas, brown basmati rice, oil, cumin seeds, mustard seeds, cloves, peanuts/cashews/sunflowers seeds, onion, garlic, hot green chile (optional), turmeric, coriander, garam masala, cayenne, tomato, bell pepper, water, salt, lemon juice, cilantro.
