2 teaspoons finely chopped shallot 1-inch piece of fresh ginger root, peeled and grated 1 small garlic clove, peeled and finely chopped 1 1/2 tablespoons rice vinegar 1 tablespoon (gasp!) tomato ketchup 1 tablespoon water 1/2 cup minus 1 tablespoon vegetable oil (*and here, I cheat. I've never used the full 7 T oil. Try 2 or 3 and see how you like it - adding more water if you wish) 3 tablespoons light soy sauce
Mix in a jar and then toss with your favorite greens!
